Herbalism

This course studies the use of herbs as medicine and explore the science of cultivating, drying, and using herbs as well as creating herbal remedies. Students will apply knowledge while exploring CCATs herb gardens, propagating, identifying, and harvesting herbs on seasonal basis.
Organic Gardening

This course will involve hands-on learning of small scale food production without the use of chemicals. Facilitated by CCAT gardeners, students will research, study and work with soil preparation, plant propagation, garden planning, composting, crop rotations, and more.
Green Building

A twelve week, hands-on introduction to sustainable building techniques. Students will help design and/or build projects at CCAT that demonstrate facets of sustainable construction and living.

Eco-Craft

An eight-week course exploring the many ways to reuse and recycle trash for the creation of art, crafts, and decor. Potential projects include painted bottle vase, CD-case towel rack, coffee bag tote, inner-tube bulletin board, to-go container drawer divider, and milk-jug lantern.
Humboldt Region Appropriate Technology

An eight week course structured around the exploration of the issues and solutions related to 6 key topics: water, energy, waste, chemicals, transportation and shopping/food. Students will learn about the local, regional, and global environmental impact of their daily choices and the solutions they can use to reduce that impact.
Students will take a number of field trips to a variety of sites that make Humboldt county and Arcata a uniquely sustainable place to live. The course may include educational field trips to the Arcata Wastewater Treatment Plant, Sun Frost (energy efficient refrigerator company), and the Arcata Educational Farm.
